  • Peel the potatoes, cook until soft and allow the steam to evaporate. Add all the ingredients to a bowl and knead thoroughly.
  • Add to a greased dish and bake at 160 °C.
  • Baking time varies with thickness. One can assume around 20 minutes with a thickness of 3 cm.
  • The Staub Riffle pan is ideal for grilling the Focaccia.

250 g boiled mashed potatoes (floury)

30 g salt

40 g yeast

75 g olive oil

500 ml lukewarm water

Raw ham
